Leprechaun Rainbow

What's at the end of this rainbow? 

It's always said at the end of each rainbow is a pot of gold. Growing up, I always hoped to acquire that pot so I could be wealthy. As I grew older, and wiser, I realized Healthy was more important than Wealthy. One letter can change everything. Don't get me wrong, money is great, but, if you're not healthy it sure makes it difficult to enjoy all that green! 

Try making one or more of your meals today fun and festive. This meal only takes a few minutes and goes great with a variety of foods. Get your children involved in the kitchen by giving them this task. If your kids are very young, just substitute the skewers for straws. Don't be afraid to get creative!
